Chia Chocolate Mousse
This chocolate mousse is so healthy you may even want to start you day with it! This mousse is not overly sweet, but creamy, decadent and satisfying. Plus, a hint of cinnamon! This mousse keeps well for up to three days in the fridge - we love switching up the toppings to change the texture and flavor!
Raw cacao is loaded with antioxidants which have been shown to reduce risk for cardiovascular disease by lowering blood pressure and improving vascular function as well as helping glucose metabolize. Because it is unprocessed, raw cacao has four times the amount of antioxidants as regular dark chocolate and twenty times the power of blueberries.
Makes 6 - 3/4 cup servings

Gluten-free, dairy-free, egg-free, soy-free and nut-free.
2 cups filtered water
¼ cup chia seeds
1 Haas avocado
4 T raw cacao powder
½ t salt
¼ cup pure maple syrup
2 t vanilla
1 t cinnamon
1 T coconut oil
Optional: 1 can full-fat coconut milk for topping (chilled)
1. Place all ingredients into a high speed blender and mix on high until well blended.
2. Pour mixture into individual ramekins or a large container and chill until set, about 2 hours.
3. To make a coconut topping, spoon out solid coconut milk from a can of chilled coconut milk and whip with a hand mixer.
4. Serve mousse with a dab of coconut cream, cacao nibs or a few berries.
