Dairy-Free Coconut Honey Ice Cream
Pure and simple. This coconut honey ice cream is completely dairy-free (and vegan!), has only 5 ingredients and can be made without an ice cream maker. Add a scoop to your favorite berries, dessert or eat right out of the container - we won’t tell anyone!
Raw, unfiltered honey contains plant-based polyphenols which are anti-carcinogenic and anti-inflammatory. Consuming local honey has also been found to help seasonal allergy sufferers through ingesting small doses of the pollen at a time such that one becomes desensitized to the allergen.
Makes: 8 - ½ cup servings
No gluten, dairy, soy, egg or processed sugar
Prep time: 15 minutes
Total time: 8 hours
2 cans full fat coconut milk
½ cup raw, unfiltered honey
½ cup non-dairy milk (soy, almond, cashew, etc.)
¼ t sea salt
3 t vanilla extract
1. Mix all ingredients in a bowl until honey is dissolved. Pour into ice cube trays and freeze for about 2 hours.
2. Remove frozen cubes and place in a blender. Blend on high until creamy and fluffy. Place in a freezer safe container and refreeze for another couple hours.
*Note: if you have an ice cream maker you can add the mixture after step one to the ice cream machine and make it according to your machine’s instructions.
