Cumin Lime Smashed Sweet Potatoes
Brighten up your table with our fresh take on sweet potatoes. We like the skin on for extra fiber and the cumin and lime are a refreshing addition to this otherwise hearty side dish. Despite their name, sweet potatoes are low on the glycemic index and are loaded with essential vitamins and nutrients.
No gluten, dairy, soy, nuts, processed sugar or egg.
3 lbs sweet potatoes
1 T cumin
1 t sea salt
½ t paprika
2 T extra virgin olive oil
juice from one lime
3 sprigs fresh cilantro
Wash potatoes thoroughly. Leaving skin on, cut into large cubes.
Steam potatoes over boiling water for about 10 minutes until tender.
Carefully dump the potatoes into a large bowl and add spices, salt, lime juice and olive oil.
4. Smash the potatoes until your desired consistency - lumps will occur.
5. Garnish the potatoes with fresh cilantro and serve.
