Mango Ginger Vinaigrette

We’re all about dressings and sauces to spice up our meals. This is one of our favorite summer dressings to make for when mangoes are in season (June - August)! Use this vinaigrette to top on salads, or as a staple in our delicious Grilled Salmon recipe.


Mango is a great source of magnesium and potassium as well as iron. It also has a good amount of fiber. in addition, mango contains the antioxidant, zeaxanthin, which can help protect the eyes from macular degeneration.

mango-vinaigrette-ingredients

Ingredients:

1-½ cups diced mango (one large mango)
1 t minced fresh ginger
zest and juice of two limes
½ t sea salt
4-5 grinds fresh black pepper
¼ - ½ t red chili pepper flakes, depending on how spicy you like it
1 T rice wine vinegar
1 T extra virgin olive oil
¼ cup filtered water

Method: 

1. Peel and cut the mango flesh away from the seed.

2. Peel the ginger and chop finely.

3. Place mango, ginger and remaining vinaigrette ingredients in a blender and mix until smooth. Add more water if a thinner consistency is desired.
